Ingredients

  • 1 lb ground beef
  • 1 cup uncooked rice
  • 1 can diced tomatoes (14 oz)
  • 1 bell pepper, chopped
  • 1 small onion, diced
  • 1 1/2 cups beef broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add the onion, bell pepper, and seasonings to the skillet. Cook for 3-5 minutes until softened.
  4. Stir in the uncooked rice, diced tomatoes, and beef broth. Bring to a simmer.
  5. Transfer mixture to a greased casserole dish. Cover with foil and bake for 35 minutes.
  6. Remove foil, sprinkle with shredded cheese, and bake uncovered for an additional 10 minutes until bubbly.
  7. Let cool for 5 minutes before serving.
