Preheat the oven to 400°F (200°C).
In a large bowl, toss the halved potatoes with olive oil, minced garlic, salt, pepper, oregano, rosemary, thyme, and paprika.
Spread the potatoes in a single layer on a baking sheet.
Roast for 35-40 minutes, flipping halfway through, until golden brown and crispy.
If using Parmesan, sprinkle over the potatoes in the last 5 minutes of baking.
Remove from the oven, garnish with fresh parsley, and serve warm.
