Ingredients

  • 2 lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 1/4 cup grated Parmesan (optional)
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the halved potatoes with olive oil, minced garlic, salt, pepper, oregano, rosemary, thyme, and paprika.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast for 35-40 minutes, flipping halfway through, until golden brown and crispy.
  5. If using Parmesan, sprinkle over the potatoes in the last 5 minutes of baking.
  6. Remove from the oven, garnish with fresh parsley, and serve warm.
